Disney Frozen Cake April 2014

I would have liked this cake to be a little less goopy, but it actually turned out better than I thought it would when I was in the middle of it.

I stacked various layers of cake and trimmed them up into the mountain shape (I used round, heart-shaped, and dome-shaped cake pans). Then I covered the entire mountain in ganache. I think I let it get a little too thick, so it didn't run down quite as well as I would have liked, but I was able to smooth it out OK. After that, I dripped a poured fondant on top of the ganache to make the snow. It was a bit of a challenge getting the poured fondant cool enough not to melt the ganache, but warm enough to still drip.

To make the ice castle, I stacked a combination of full and crushed ice cubes from my freezer into the shape of a castle in my big oblong kitchen strainer and set that on top of a cookie sheet (this took several attempts, since my ice stack kept wanting to collapse. Then I made a hard candy on the stove and poured it over the ice castle. It hardened quickly, then I just had to wait for the ice to melt though the strainer and onto the cookie sheet. I had to be careful in detaching the finished candy castle from the strainer, but it wasn't too difficult. I also poured some of the excess hot candy over a few loose ice cubes to have a few extra little pieces to stick around at the base of the castle or other areas that just needed a little something (hence, the portion of the ice castle that works its way down the front of the cake).

I made Elsa out of candy clay, and I have to admit that I was a little lazy with her. I wish I would have spent a little more time making her look better, but I just didn't have any more time to spend.
